Memorial Day, warm weather and greasy, lard laden chunks of BBQ meat to indulge on!! No way!! What’s going to happen to your lovely skin? The wafting smells of sputtering meat, the sizzling sounds of the barbecue sauce dribbling on the grill and the yummy smoky smells are enough to garner a loud rumble from the tummy. Hmm… can’t resist, right? The irresistible, mouth watering BBQ is beckoning you 🙂
Time for the good news! mySkin has three “BBQ cheat-sheet recipes” that will satisfy your tummy, not make you feel “all bloaty” and miserable and keep your skin health meter UP! Read on, sizzle on the grill and indulge!
All you need is – 1 medium sized eggplant, 2 onions, 1 zucchini, 1 large red bell-pepper cut into 1 inch wide strips, 1 diced tomato, ½ cup chopped black olives, 2 tbs chopped basil and parsley, 1 ½ tbs olive oil, ½ cup Olive oil and Lemon Marinade, 1 tbs wine vinegar, salt and pepper.
Heat the grill. Cut the eggplant into ½-inch slices, add salt, and keep separate. Peel onions, cut into half, and steam until just tender. Brush the vegetables with the marinade.
Grill the eggplant, zucchini, onions and pepper strips on both sides until brown. When done, cut the vegetables into large chunks. Add the vegetables in a large bowl, along with the tomato, olives, herbs, oil, and vinegar. Add salt and pepper and toss.
All you need is – 4 ounce salmon steaks of fillets, ¼ cup peanut oil, 2 tbs soy sauce, 2 tbs balsamic vinegar, 2 tbs green onions, 2 tsp brown sugar, 2 tsp red pepper flakes, 1 minced clove garlic, ¾ tsp grated ginger, ½ tsp sesame oil, salt and pepper to taste.
Combine all the ingredients except the salmon in a bowl. Marinade the salmon in the mixture for about 2 to 3 hours, by placing it in the refrigerator. Preheat the grill.
Brush the fish on both sides with marinade and place the marinated fish on the grill. Cook until done.
All you need is – 4 boneless chicken breasts, 1 tsp dried oregano, 1tbs olive oil, 1 tsp chili powder, ¾ tsp ground cumin, 3 minced garlic cloves, and salt. FOR THE SALSA: 2 cups diced watermelon, 1 cup diced mango, ¼ cup red onion, 2 tbs chopped cilantro, 2 tbs chopped jalapeno peppers, 1 tbs limejuice, sugar, and salt for taste. In a zipper bag, mix the oregano, olive oil, chili powder, cumin, garlic, salt, and chicken. Marinade in the refrigerator for 4 hours. Preheat the grill. Combine all the salsa ingredients in a small bowl and place in refrigerator to cool.
Place the chicken on the pre-heated grill and grill until cooked on both sides. Serve with the salsa.
