Today is International Picnic Day
It’s a lovely summery-sunny day! A perfect day to pack a basket full of goodies and head out to the beach with friends and family, or drive down to a wild, untouched location and enjoy the beauty of nature amidst family, friends and a scrumptious picnic basket.
A picnic basket often means oily, fried bacon sandwiches, bags of chips or sugary candy and a tall bottle of coke. So much for all that careful eating, skin care routine and perfect makeup, if you have to wake up the morning after your picnic with a huge zit; a telltale sign of unhealthy eating!

Raspberry Lemonade- Filled with polyphenolic antioxidants, Vit A and C, salicylic acid and manganese, fresh raspberry puree can give this lemonade quite a twist!
Ingredients: 1-cup fresh lemon juice, ½-cup sugar, 1 tbsp. fresh/frozen raspberry puree, 2 cups water, Ice cubes.
Prep: Mix 2 cups of water, lemon juice, puree, and sugar in a jug until sugar dissolves. Keep refrigerated until it is ready for the picnic.
Kale Chips- There’s nothing more addictive than these super skin-healthy chips. They’re super simple to make too!
Ingredients: Just a big bunch of Kale, olive oil, salt
Prep: Preheat the oven to 400F, Coat two baking sheets with the olive oil and set aside. Trim the kale stems and cut the leaves into 2-inch pieces. Spread the kale onto the baking sheets. Liberally coat the kale with oil and sprinkle some salt for taste. Bake for about 10 minutes or until the kale is crispy to touch.
Fiery Chicken Salad Sandwich- A picnic is all about easy-to-carry food. This salad sandwich brings in best of both – salad and sandwich. Jam-packed with colorful skin-tillating veggies, greens and tasty, fiery chicken, this is an absolute filler!
Ingredients: 6 ounces cooked and shredded chicken, 3 teaspoons fat-free mayonnaise, 2 teaspoons minced onion, whole-wheat/multi-grain bread, 1 teaspoon pepper and chili powder, 1 cup of mixed diced (boiled) carrots, corn, bell peppers and 2 cups of lettuce leaves, salt.
Prep: In a bowl mix the chicken, diced mixed veggies, mayonnaise, onion, pepper, chili and salt. Mix well. Arrange the lettuce on sandwich bread, spread the chicken salad and top it with another set of lettuce. Grill if desired.
Blueberry Yogurt Cheesecake – in a jar!- Fresh and filled with antioxidants, blueberries are perfect for a picnic. As for a yogurt-based cheesecake – yummy!
Ingredients – 1/2 cup fresh blueberries, 1 egg, ¼ cream cheese, 2/3 cup plain Greek yogurt, 1 tsp pure vanilla extract, salt, 3 tbsp. powdered palm sugar.
Prep: Preheat oven to 350F and grease the jars. Blend egg, cream cheese, yogurt, salt, sweetener, vanilla and blend until smooth and creamy. Fill the jars half way and place in water bath (a baking pan with water filled halfway up the sides of the jars). Bake for 40-45 minutes until set. Cool to room temperature before refrigerating. Carry the blueberries separate and top before serving.
