Eat For The Season: Healthy Spring Salads

Winter is slowly but certainly getting ready to leave us and spring is just around the corner.
Spring is the season of new beginnings for a lot of people: that’s when we clean our houses, renew our wardrobes, refill our skincare cabinets…and refine our diets!
With the first rays of spring sun, most of us want to swap heavy, warming winter foods for something lighter, but just as tasty.

Salads are a great choice all year round! They can provide an easy, filling and delicious meal for everyone willing to play around and experiment. To prove salads are everything but tasteless and boring, here are some of our favorite recipes for all tastes:

  1. Pasta salad – The Italian classic Chop some cherry tomatoes, spring onions, black olives and mozzarella and mix it all in one bowl. Put your pasta of choice to cook, adding a couple of garlic cloves to the pot. Finely chop some fresh basil and cucumbers and add to the veggies in the bowl. Once the pasta is cooked, drain it and mix with the veggies. Squash the cooked garlic cloves and add to the mix. Season with salt, pepper and olive oil. Leave in the fridge for a couple of hours and serve cold.
  2. Chicken salad – For the meat lovers Mix your favorite lettuce with rocket and cherry tomatoes. Add a desired amount of grilled chicken breast. For a kick of freshness, add some fruit of choice: apple is a classic, but pears work really good as well! Season with salt, olive oil and a splash of balsamic vinegar. A couple of drops of lemon juice and some parmesan on top finish our this amazing salad with a lovely twist!
  3. Walnuts and goat cheese salad – Vegetarian and gluten-free Use your favorite baby greens – baby spinach and rocket are usually the base. Slice a red apple and add it to the greens. Finally, add the goat cheese and walnuts. Drizzle with poppy seed dressing and enjoy this easy and delicious meal!
